Vintage Notes
Our twelfth vintage of this appellation Cabernet is blended from a combination of hillside and valley floor vineyards. Our style combines the harmony produced by traditional Bordelaise winemaking techniques with the voluptuousness gained from California’s weather, especially in this perfect vintage. Three weeks of cool weather in August and September relaxed the pace of harvest, allowing for methodical picking decisions and perfectly developed fruit. Yields were relatively average – down from 2014 and up from 2015.
Harvest Date: September 8 to October 11
Brix: 25˚ average
Varietal Composition: 82% Cabernet Sauvignon, 8% Merlot, 6% Petit Verdot, 2% Malbec, and 2% Cab Franc
Winemaking
Aging sur lies with bi-monthly bâtonnage coats the tannins and integrates the wood. The 2016 vintage matured 28 months in 48% new French oak barrels (Taransaud & Demptos). Non-filtered
